CHÂTEAU OLIVIER’S WINES VINTAGE 2017 ARE IN AGEING – GRAND CRU CLASSE
2017 is an early vintage.
The harvest for the white grape varieties began on August 28th. The alcoholic fermentation went well. The wines are aged on the lees with regular stirring in barrels. Sauvignons and Semillons are very aromatic this year.
The harvest began on September 12 with Merlots and September 19 with Cabernet Sauvignon and Petit Verdot. After 25 to 30 days of vatting, the malolactic fermentation comes to the end. The Merlots are fruity. Cabernet Sauvignon and Petit-Verdot are rich and structured.
In December, the different lots will be tasted to start thinking about the blend.
